Fruits & Goat Cheese Salad
Traveling can add a lot of stress to one’s lifestyle and the best way to overcome fatigue is to stack on super-foods, drink a lot of water, and maintain a consistent workout routine. Salads are the easiest meals to make -especially after a long day at work. The ingredients are minimal, yet rich in antioxidants and vitamins.
– Your greens’ choice: baby spinach, baby romaine lettuce, arugula, kale or a combination of all
– Balsamic Vinegar
– 1/4 cup strawberries
– 1/4 cup blueberries
– 1/4 cup walnuts
– 1/4 cup raspberries
– 1 green apple
– 1 pear
– Goat Cheese
1. Toss the greens into a bowl and drizzle balsamic vinegar
2. Finely chop the fruits and add them to the greens
3. Garnish the salad with walnuts and other dried fruits
4. Add goat cheese
**In this recipe, I mixed goat cheese with puréed raspberries and a bit of cranberries, to add more flavor to the dish. The result is beyond delicious!
