Lamb Chops & Grilled Vegetables For Valentine’s
It’s that time of the year!
Being all about intimacy and simplicity, we prefer to stay home this Valentine’s day and enjoy a delicious homemade meal with a robust and earthy tasting red wine bottle. Whether you are celebrating this day with your loved one or with friends, this lamb chops and grilled vegetables recipe is perfect to do on your own: Simple, healthy, and mouth watering!
– Thyme Seasoning
– Olive Oil
– Rosemary Leaves
– Cherry Tomatoes
– Red Potatoes
– Grass-fed Lamb Chops
– Freekeh or Quinoa
1- Preheat the oven to 400 F/200 C
2- In a pot, boil the zucchini, squash, and red potatoes
3- Using a food processor, combine the olive oil with thyme seasoning and rosemary leaves
4- Season the lamb chops with the sauce and cook for 30-40 minutes* until well cooked
5- Meanwhile, strain and chop the vegetables: Zucchini, squash, and red potatoes
6- In a skillet, add the onions, tomatoes, and the remaining vegetables with some olive oil, salt and thyme
7- Grill the vegetables until roasted and crispy
8- Serve the meal with cooked freekeh or quinoa
* If you like your red meat medium well, then cook for 30 minutes
